Food Production

The Food Production Program is designed for students who aspire to build a professional career in the culinary and hospitality industry, including hotels, resorts, restaurants, and cruise ships. Through a balanced combination of classroom learning, hands-on practice, and industry experience, students develop the technical skills, professional discipline, and confidence needed to work in a professional kitchen.

First Semester

Fundamentals & Practical Kitchen Training

During the first semester, students undertake intensive learning on campus, combining theoretical knowledge with practical training in our hospitality training facilities. Students are introduced to fundamental culinary techniques, kitchen operations, food preparation, menu knowledge, food safety and hygiene, kitchen organization, and professional standards. Practical sessions provide opportunities to develop skills in areas such as hot kitchen, cold kitchen, pastry and bakery, as well as the preparation and presentation of a variety of local and international dishes.

Communication & Soft Skills

Developing Professional Soft Skills

In addition to culinary skills, students develop English communication skills, including General English and English for Hospitality, enabling them to communicate effectively in a professional kitchen and multicultural work environment. Students also learn about teamwork, workplace discipline, cost awareness, and other essential competencies that support their professional development.

Second Semester

Industry Training & Field Experience

The second semester is dedicated to industry training, where students have the opportunity to apply the knowledge and skills gained on campus in a real hospitality environment. Through supervised workplace experience, students become familiar with professional kitchen operations, industry standards, teamwork, time management, and the responsibilities of working in a commercial kitchen.

This practical experience helps students build workplace confidence and gain valuable exposure to the demands of the hospitality industry.
